Excellent quality oil, without any acidity, it doesn't hit the throat at all, a very slight bitter aftertaste as it should be for good oil. To be tasted raw on bread and to season cold meat and vegetables, I almost hate having to use it for cooking. I will definitely buy it again and I recommend it. What does your oil taste like?
Our oil is a medium fruity blend, very balanced, with dominant notes of almond, artichoke and cut grass. It is a medium fruity, which satisfies the most demanding palates without "attacking" the throat. To remove any doubts, our tasting kit is available online.
What is the variety of olive trees/oil?
Our oil is obtained from the cultivars Cellina di Nardò, Ogliarola Salentina and Leccino. The aromatic characteristics of the oils allow us to obtain a very balanced blend. The spiciness of the Cellina is softened by the sweetness of the Ogliarola. The Leccino gives the oil those olfactory notes that we like so much.
Where are you and where do you have your cultivated land?
Our mill is located in Erchie, a small town in the province of Brindisi, in the upper Salento, Puglia. Our olive groves are all within a 30 km radius around the company center.
What is the Saracino oil production process?
The harvest begins early in the morning and as soon as the first 5-6 bins of olives are completed, we go to the mill to immediately carry out the milling and avoid fermentation processes. The harvest ends at 2:00 pm every day and by 10:00 pm all the olives collected during the day are pressed. The oil is tasted, selected and analyzed after which it is left to rest in the silos for a few days. Once the coarser pulp has settled to the bottom it is decanted, bottled and shipped.
What are the shipping costs?
Costs vary based on weight and range from €5 to €10. Shipping is free in Italy for orders over €139.
5 REASONS TO CHOOSE OUR OIL
1. Very short supply chain
By purchasing from us you are sure to receive at your home an authentic oil, 100% Italian, that has not undergone many steps and price increases before reaching you. The same one we use at home!
Producing olives is not enough! Only by having the OIL MILL at home can you:
- Press within a few hours of harvesting, avoiding fermentation processes that ruin the olives and consequently the oil;
- Carefully monitor the transformation process so as not to heat the oil and maintain the unique organoleptic and nutritional properties of extra virgin olive oil unaltered;
- Store the oil in stainless steel tanks (not in makeshift containers) at a controlled temperature and in the absence of oxygen;
- Bottle each time after analyzing and tasting the oil.
2. Super cold extraction
The law requires that in order to use the term “cold extracted” on the label, it is mandatory to extract at a temperature below 27°C.
We choose to extract at temperatures below 25°C in order to obtain the highest quality at the expense of quantity. The lower the extraction temperature, the less oil can be extracted, but trust me, the flavor and aroma of the oil change completely. We don't want to lose any of those aromatic notes!
3. Organic Farming
The olive tree has always been defined as the rich plant for poor lands because it does not need much care to grow and bear fruit. This allows us to manage our 50 hectares scrupulously following the organic farming regulations and to guarantee that our oil does not have pesticide residues as found by the multi-residue analyses carried out by an ACCREDIA certified laboratory.
4. Environmental Sustainability
The production of extra virgin olive oil occurs exclusively through mechanical processes and is sustainable in all its phases.
- Olive trees produce their precious fruits using very little water and natural fertilizers.
- During the transformation period (October-November) the Apulian sun allows us to power the extraction plant with solar energy.
From the pressing of olives we obtain :
- Our precious oil;
- vegetation and washing waters that are spread on the land and return water and nutrients to the environment.
- The olive stone is woody, and is used for heating greenhouses and homes as a substitute for fossil fuels.
- The de-oiled and pitted olive pulp is fermented to produce biogas and therefore clean energy.
