Description
Its name “sagne 'ncannulate” means twisted, and that is exactly how this pasta is made, a delicate and precise movement of a half rotation of the wrist.
It is said that they were created for the first time by the ancient pasta makers of Puglia in homage to Saint Joseph, thus reproducing the shape of the wood shavings found in carpenters' shops.
The most famous variant is sagne ncannulate with chickpeas .
This type of pasta goes very well with fish, but also with a simple yellow and red tomato sauce and fresh ricotta.
