Thanks to the ancient “Confit” preservation technique, the flavour of cherry tomatoes is preserved unaltered and the nutritional properties of the food are preserved, which thus remains rich in lycopene and mineral salts.
The “Ciliegini” tomatoes are grown a few kilometers from the sea, from April to July, the month in which the harvest takes place, and, subsequently, the selection and cutting, all strictly by hand. The word “Confit” comes from French, and is an ancient preservation technique that occurs through drying at low temperatures for a long time in the presence of sugar.
This slow drying process allows the flavor of the cherry tomatoes to be preserved almost unaltered, so they remain fresh and full of flavor, while the sugar gives them a pleasant sweet taste. Furthermore, this type of delicate processing also allows the nutritional properties of the food to be preserved, so they remain rich in lycopene and mineral salts.
