Description
Long tomatoes are grown in the open field in April and May, and harvested by hand in July and August. They are then washed, selected, cut by hand, salted and left to rest on drying frames for 4-5 days. This is a natural and traditional technique. Immediately after, the tomatoes are washed in water and vinegar and ground together with Racale capers and Mediterranean spices. The resulting pâté is then bottled with extra virgin olive oil. To obtain 1 kg of dried tomatoes for the pâté, approximately 10 kg of fresh tomatoes are needed.

- sunflower seed oil,
- capers,
- onion,
- extra virgin olive oil,
- apple cider vinegar,
- whole salt,
- lemon juice.
