Description
Small, tender and tasty, these artichokes are of the so-called “violet” type. Cultivation begins in October, while harvesting begins in April. Processing takes place within eight hours of being fresh. It is very tender, just defoliated and turned manually with a small knife. Immediately after, it is jarred in extra virgin olive oil. No other condiments or spices are added, to maximize the unique flavor of this product. They can be used to enrich an appetizer or cold rice together with other Mediterranean vegetables.
Also excellent on pizza, they have a natural flavor and are very crunchy, so they can also be sautéed in a pan to enrich a hot dish. This unique characteristic, their crunchiness, makes them a truly sought-after product!
