They are a typical wild fruit from Puglia that is found underground. They cannot be cultivated, and their presence on our tables is guaranteed by farmers who harvest them using special zamponcelli.
They are a wild fruit that is found 5 - 10 cm underground. They cannot be cultivated, and their presence on our tables is guaranteed by farmers who collect them using special zamponcelli. They must be washed well, blanched with water and vinegar and cleaned manually with a small knife.
It is a very meticulous job that requires great care and a lot of time. Finally it is jarred by hand with fresh mint, chili pepper and extra virgin olive oil.
